Coffee Bean Roast Style

The roasting process can yield a variety of different flavours from the same bean. There are two major families of compounds in coffee, acids and oils. Roasting a coffee until it is burned will dampen its acidity, while under-roasting might not develop the flavours contained in the coffee's oils. Roasters will talk about the "crack". As coffee is roasted, it cracks twice, and each crack tells the roaster that a certain level in the chemical reaction has been achieved. A coffee roasted to a lesser degree will exhibit the flavours typical of the manner in which it is grown and processed, but a darker roast will show more the flavour of the roasting process. This is why roasting is considered an art. In order to achieve a coffee's full potential, a balance must be reached between these factors. At Byron Beans, coffee is roasted to showcase the flavours produced by our unique farming practices, and our Roaster's Choice blends, we feel, are the best suited to our coffee.

Coffee beans from famous regions like Java, Kenya, Hawaiian Kona, and Jamaican Blue Mountain are usually roasted more lightly so their signature characteristics dominate the flavour. As the beans darken to a deep brown, the characteristic flavors of the bean are eclipsed by the flavors created by the roasting process itself. At darker roasts, the "roast flavor" is so dominant that it can be difficult to distinguish the origin of the beans used in the roast.

  • Light - Lighter bodied, high acidity, no obvious roast flavour. Full flavour, slightly thin taste.
  • Medium - Sweeter, with more body. Complex mix of acidity, flavours and body.
  • Dark - More body with roast flavours evident. Slightly less complex coffee flavours. Becoming oily
  • Extra Dark - Light bodied but thick roasted taste. Less acidity and almost no characteristic coffee flavours. Oily

We also offer 2 combinations of our roasted beans. This combines the sweetness and acidity of a medium roast, with the fuller body in a darker roast. 

  • Medium combo - An equal combination of medium and dark roasted coffee. Our roasters choice for plunger and filter coffee.
  • Dark combo - It consists of 25% medium and 75% dark roasted coffee. Our roasters choice for espresso coffee.
